Banana Cake with Blueberries

This recipe is always a hit at home. Everyone likes it and it is super healthy! My husband takes it to work, my daughter takes it to school in her lunch box and I love it when it's still warm out of the oven…

I always change the nuts and add different tastes such as açaí powder or coconut, so the cake tastes different each week. Feel free to use your imagination!

This cake is dairy free, refined sugar free, free from all that ‘nasty stuff’! It can be gluten free and vegan as well. It can be consumed as a pre-workout or a snack, easy to take in the bag.

Here it goes:

INGREDIENTS

  • 3 mashed ripe bananas

  • 1/3 cup of coconut oil (should be melted if too hard)

  • 1 egg or 2 tablespoons of milled flaxseed

  • ½ cup of ground almonds or the nut/seeds of your choice

  • 1 ½ cup of oats

  • 1 cup of raisins

  • 1 cup of blueberries or frozen mix of berries

 

METHOD

Put the bananas in a bowl, plus the egg (or flaxseed), coconut oil, almonds and/or seeds. Combine the mixture well. Add the oats and mix well. Then add the raisins, combine all together. At last add the blueberries/frozen berries and combine these too. Pour the batter in a greased loaf tin and bake in the oven on 160C for around 55 minutes. When the middle is baked, take it out and let it cool off.

 

Enjoy while still a little warm, it is so delicious!
