Goji Coconut Balls

I am a big fan of energy balls. Easy to carry as a snack and always so delicious! I love my energy balls made with dates, but these ones are made with goji and coconut which are just as awesome!

Follows this recipe of Goji coconut balls:

Ingredients:

  • 1 cup shredded coconut flakes

  • ½ cup coconut oil

  • 1 ½ cup raw cashews

  • 1 ¼ hempseeds

  • 1 ½ cup goji berries

  • 2 ½ tablespoons raw honey

  • 1 pinch of salt

 

Method:

Grind seeds and nuts separately then add the remaining ingredients in a food processor and blend until mixture becomes a mush. Roll into balls and put in the refrigerator for a couple hours.  Then, enjoy!
