Healthy Snickers Bars

This is great to do with kids and a healthier version of those “snickers” chocolates. Perfect for something different to do with them during the lockdown. It is made with dates, oats and nut butter or peanut butter. Functional and full of nutrients!

​

Here is the recipe:

​

Ingredients for the date caramel:

​

  • 200g pitted dates

  • 3 tbsp smooth peanut butter or other nut/seed butter

  • 1 tbsp hot water

​

Ingredients for the base:

​

  • 100g oats flour (make your own by blending oats in a blender until powdered)

  • 3 heaped tbsp of the date caramel

  • 2 tbsp hot water

 

Top layer ingredients:

​

  • Handful of salted peanuts

  • 150g dark chocolate

 

Soak the dates in boiling water for 15 minutes. Drain, take pits out and pour dates into the food processor. Add the peanut/nut butter and 1 tbsp hot water and blend until smooth.

 

Scoop the caramel into a bowl, then pour the oat flour and 3 tbsp of that caramel into the food processor. Blend the oat flour with caramel and add 2 tbsp of hot water, add another spoon if needed to form a sticky dough.

Push the dough into the bottom of the lined tin and spread out, pushing down with the back of a wet spatula until flat.

Spread the remaining caramel over the dough base and sprinkle the peanuts on the top, pushing them down a bit. Bring to the freezer for 1,5 hours.

 

Once frozen, remove from tin and slice into big or small bars.

Put the chocolate in a low heat to melt. Using to forks, turn the bars in the chocolate, then place on a plate and chill in fridge.

Keep in the fridge and enjoy within 14 days… if you don’t eat them all first :)
